Traveling on the Edge

Traveling with gratitude means being thankful and appreciative of everything we have and experience. It involves recognizing the value and privilege of being able to travel and see the world. It’s been a moment but finding Clarity: Insights from few days at Camp. The sun dipped below the horizon, casting a warm glow over the tranquil campsite. As I settled into my canvas chair, surrounded by towering pine trees and the distant hum of crickets, I felt a sense of calm wash over me. Little did I know that these few days of relaxation would lead to profound insights and a renewed perspective on life.he rustling leaves, the distant call of a bird, and the gentle sway of the hammock—I immersed myself in nature. Away from the hustle of city life, I found solace in the simplicity of existence. The campfire crackled, and as the flames danced, so did my thoughts. I realized that true insight often emerges when we allow ourselves to be still.Insight #1: Being present is a gift we rarely unwrap. Amidst the tall pines, I learned to savor each moment—the taste of morning coffee, the feel of dew-kissed grass, the laughter shared around the campfire. Mindfulness wasn’t just a buzzword; it was a way of life.As I left the campsite, I carried these insights with me. Life, once cluttered, now felt spacious. Gourmet Mexican Style …

Modern Mexican Soft Toritas with Carne Asada, Berries, and Spicy Chocolate
A fusion of Mexican flavors with tender carne asada, fresh berries, and a kick of spicy chocolate, all layered between soft toritas for a delectable twist on a classic dish. 1 lb carne asada
8 small toritas (soft tortillas)
1 cup mixed berries (strawberries, blueberries, raspberries)
1 cup dark chocolate, chopped
1/4 tsp cayenne pepper
1/4 tsp cinnamon
1/2 cup heavy cream
Cook carne asada on a grill or stovetop until medium-rare, then slice thinly.
Warm toritas on a skillet until soft and pliable.
Place a few slices of carne asada on each torita.
Top with mixed berries.
In a saucepan, melt chocolate with cayenne pepper, cinnamon, and cream until smooth.
Pour spicy chocolate sauce over the berries and carne asada.
Fold the toritas and serve warm.

More than just a Bowl of Rice ..

Seafood Rice Bowl with Honey Lemon Sauce. A delectable seafood rice bowl featuring Northern red snapper, Amberjack, and Tuna, complemented by bell peppers, onions, spinach, and a zesty honey lemon sauce. A burst of flavors in every bite! 1 lb Northern red snapper fillets
1 lb Amberjack fillets
1 lb Tuna steaks
2 bell peppers, sliced
1 onion, sliced
2 cups fresh spinach
1 lemon, juiced
1/4 cup honey
Salt and pepper to taste
Cooked rice for serving
Preheat oven to 375°F.
Season fish with salt and pepper, place on baking sheet.
Bake for 15-20 minutes until cooked through.
In a skillet, sauté bell peppers, onions, and spinach.
In a small bowl, whisk together lemon juice and honey for sauce.
Assemble bowls with rice, fish, sautéed veggies.
Drizzle with honey lemon sauce.
Enjoy!

The Pattern

My mentor’s latest assignment challenged me to draw my strongest emotion, which he refers to as the ‘four phases of life.’ It begins with the earliest moment I lost my mother when I was just a child, leaving me with nowhere to turn. As I grew older, I felt a persistent cold and rain within me. I experienced the storm passing by, and then my grandfather passed away, followed by my grandmother, the last of them all. These four situations was the most important four moments of my life. Deep lost and more lost I guess. Mr. Coa smiled and just said “I want you to share this on your Facebook, Mr.Freedom Mercado your artwork will grow as well as your writing.” so I’m doing what he order to me to do.
